Hi Guys! Long time no see! I have been busy working and doing mom things that this blog slips my minds sometimes! I'm not going to bore y'all with a long story or anything with how this recipe came about. (I hate when people do that!) The simple story is; I was trying to find a low calorie fat free instead of using Milk and Butter and alas here we are!

1 pound cauliflower florets 

4 small potatoes diced (I use golden's) 

3/4 cup plain greek yogurt 

Chives for topping 

Salt and Pepper to taste


Place florets and potatoes in water and bring to a boil until potatoes are nice and soft. 


Once drained, place back into pot and mash with potato masher. 

once mashed to your desired consistency add the greek yogurt, mixing well. 

add salt and pepper to taste and top with chives.
