Buffalo Chicken Soup

 


A hearty buffalo chicken soup that's good for the soul, and for when you have a cold. 

I made this recipe on the fly last week, after deciding that i was officially not a meal prep person. Hey, I tried at least. And after eating a few bowls of it I felt like I had to share. It was just too good not to! 

Ingredients

1 cup cooked and chopped chicken breast 

1 cup diced carrots

1/2 onion

4 celery stalks (chopped into chunks) 

1/3 box of Bow Tie noodles 

4 gloves of garlic (minced) 

9 cups of water 

6 chicken bouillon cubes

1 tablespoon oil (I use olive) 

1 teaspoon ground Tumeric 

2 table spoons buffalo sauce 

1 teaspoon ground cumin 

salt and pepper to taste


Directions 

1. In a large pot add 1 tablespoon oil and let it heat up on a medium heat for a minute. Once heated add your carrots, onion, and celery to the pot, letting them cook for till everything is soft. (about 6-8 minutes) 

2. Add your garlic and let cook for 1 additional minute. 

3. Add your chicken and noodles to the pot along with your chicken bouillon cubes and all the seasonings and buffalo sauce. 

4. let cook for 20 minutes and enjoy :)
